imageFor a friend’s birthday, I invited her out for lunch and asked her to pick the spot. Low and behold, we ended up at a food truck and it was soooo good! If you haven’t joined the craze, you should. It’s such a great way to try new flavours, freshly made by hard-working locals. And especially nice as a summer treat to dine outside.
imageThere were three distinctly different trucks to choose from at our stop: a taco truck, specialty hot dog joint and a burger-type place. We both settled on the Chickpea Burger with yam and beet chips on the side and were not disappointed! Now I’m trying to figure out how I can make this at home.

The bonus part of the whole outing for me was a reminder of how much I value my friendships. As an introvert, I love and need a lot of alone time and am not super social. The friends that I do have, I truly enjoy and especially appreciate the new things they expose me to. I wouldn’t have known about this food truck park or ventured to try it without the friendly nudge. I aim to remain open to more of these experiences!
