imageLow in fat, high in fibre and super yummy, this is my go-to recipe whenever I feel like baking or need to use up overripe bananas! I’ve played with this one a lot and can honestly say it’s a fool-proof crowd pleaser. Use what you have on hand and don’t fret if you scrimp on any ingredient. I made these for a bake sale once and realized too late that I’d totally skipped the sugar….four people asked me for the recipe anyway! Here goes:

  • 5-6 ripe mashed bananas
  • 2 eggs
  • 2/3 cup applesauce
  • 3/4 cup brown sugar
  • 1 1/2 cup flour
  • 1 1/2 cup oatmeal
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup dark chocolate chips

Mix the first 4 ingredients in a bowl and set aside. Combine the remaining dry ingredients in a large bowl and stir. Make a well in the dry ingredients and add your wet. Stir until well combined. Spoon into greased or paper lined muffin tins and bake at 350 degrees for 20-25 minutes. Makes 24 small muffins, 18 larger muffins. These freeze well!
